From Australia’s newest Agave spirits on Tamborine Mountain, a bright new Bergamotcello, limited release brews, and even a Camel Milk Vodka & Peach Spritz, the Scenic Rim’s distillers, brewers and winemakers
are raising their glasses to the season.

The Cauldron Distillery – announces three new Australian Agave spirits

Cauldron Estate and Distillery is an exciting sipping destination on Tamborine Mountain. In the Hartley Road Winery Precinct, it’s famed for handcrafted small-batch spirits, award-winning Queensland Single Malt Whisky and warm hospitality. So, what’s Agave all about? Globally recognised for tequila and mezcal, Agave spirits are distilled from the heart of the agave plant. With Australia’s unique climate and creativity, local distillers are now creating distinctive agave spirits that reflect the land they’re made from. The Cauldron’s NEW releases include:
- Australian Agave Spirit Blanco (Lime, Chilli & Saltbush): A bold and zesty agave spirit with a lively kick of fresh chilli. Bright lime and green vegetal agave take centre stage, underpinned by a savoury twist of Australian Saltbush. It’s equally enjoyable sipped neat or mixed into your favourite cocktail.
- Australian Agave Spirit Reposado: A rich, complex agave spirit delicately rested in American oak, adding depth and colour while preserving the fresh, green character of agave at its heart. Subtle layers of creamy caramel, soft vanilla and cinnamon weave through, creating a mellow, rounded finish. Crafted to be savoured neat in good company.
- Café Freddo Della Montagna (Limited Release): A full-bodied coffee liqueur, layered with exotic spices, dark chocolate, caramel and toffee. Organically grown coffee is cold-pressed and infused with fresh vanilla beans and cinnamon and sweetened with organic rapadura sugar. Enjoy over ice, in an espresso martini, as a decadent affogato.

In addition to their new seasonal Spring Cocktail, featuring the Spring Bloom (a mix of Lilly Pilly Gin & Hibiscus Liqueur) or Lavender Haze (a mix of Lilly Pilly Gin & Lavender Liqueur), their new seasonal Bergamotcello has just dropped. This is a bright, fragrant citrus liqueur made with bergamot, offering both zesty and floral notes, reminiscent of Earl Grey, and perfect for Spring.
The Bergamotcello is best neat or over ice to fully appreciate its floral aroma. For cocktails, it transforms a simple Spritz into something elegant, elevates a Citrus Sour with its Earl Grey-like complexity, or brings a refined lift to a light Collins. Modern amaro creator (think Aperol, with centuries-old Italian heritage), Loborn’s founder, Tom Drewett, had a thought: what if he could reinvent the famous bitter aperitif using local Australian botanicals? Loborn literally means Locally Born, and Tom has achieved his aim, with the result being a distinctly modern amaro that pays homage to the rich history and craftmanship of Italy, but has a local Tamborine Mountain flavour. Pet friendly. He has shared the recipe for his Elderflower Spring Spritz:
- 70ml Loborn Amaro No. 1
- 100ml Prosecco (Bird Dog Sparkling Brut from Witches Falls Winery)
- 25ml Soda Water
- 20ml Elderflower Cordial (Elderflower Farm near Kalbar)
- Served in a wine class with plenty of ice. Garnish with an orange twist or a fresh elderflower.
The Commercial Hotel Boonah & Boonah Brewing Company – locally brewed

The family-owned Commercial Hotel Boonah and its adjacent microbrewery, Boonah Brewing Co., are a true Scenic Rim success story. Sustainability and flavour go hand in hand here: the brewery draws on pure spring water from underground aquifers on the family’s nearby farm, while spent grains and hops feed their free-range cattle. That same prime beef makes its way back onto the menu at the much-loved “Commie.” Spring sips brewed onsite include:
- Boonah Mid Strength - Crisp, refreshing, and full of flavour. Easy drinking with Pilsner malt and Aussie Cascade hops.
- Ginger Beer - Zesty, fizzy, and spicy. Made with fresh Scenic Rim ginger, served over ice with lime.
- Aussie Pale Ale - Naturally hazy with a big tropical aroma. Dry-hopped with Galaxy, Eclipse & Cascade.
- Italian Pilsner - Crisp and floral with subtle honey notes. Brewed with Italian Eraclea malt & Tettnang hops.
- Dunkel Dark Lager - Smooth, malty with notes of chocolate & caramel. Brewed true to Munich tradition with authentic roasted Munich malt.
- Hard Lemonade - Tart, sweet, & super refreshing. Made with bush lemons & fresh lime.
Summer Land Camels - The Camel Milk Vodka & Peach Spritz

They have shared the recipe for their sensational Spring Sip: The Camel Milk Vodka & Peach Spritz -
Ingredients:
- 45 ml Summer Land Camels French Oak Matured Camel Milk Vodka
- 30 ml peach nectar (or fresh peach purée for a natural touch)
- 15 ml fresh lemon juice
- 90 ml sparkling water (or soda water)
- Ice, and fresh mint and peach slices, to garnish
Method:
- Fill a highball or stemless wine glass with ice.
- Add the vodka, peach nectar, and lemon juice. Stir gently.
- Top with sparkling water.
- Garnish with a sprig of fresh mint and a peach slice.
Serving Tip: Serve chilled as an aperitif on the deck or at sunset, ideally paired with antipasti or light farm-fresh snacks like marinated camel feta, olives, or cured meats.
